Quark Pastry Triangles
Quark pastry triangles filled with jam and rolled in vanilla sugar.
My favourite sweet treat from childhood. I have this recipe handwritten in my family recipe notebook.
The dough has just three ingredients in equal amounts: quark, fat and flour. We fill the triangles with jam, bake them quickly and roll them in vanilla sugar while still warm.
What you’ll need
- Dough:
- 250 g quark (Czech “tvaroh”)
- 250 g fat (e.g. butter)
- 250 g flour
- Filling:
- jam
- For coating:
- icing sugar mixed with vanilla sugar
How to make them
- We work the quark, fat and flour into a smooth dough on a pastry board.
- We can let the dough rest in the fridge.
- We roll the dough out to about 3 mm and cut it into squares of about 6–7 cm.
- We put a little jam in the middle of each square, fold it into a triangle and press the edges firmly together.
- We bake the triangles quickly in an oven preheated to 200 °C for about 10–12 minutes, until golden.
- While still warm, we roll the triangles in icing sugar mixed with vanilla sugar.
